Choose salmon fillets that look moist, with few dark spots, for these crispy salmon bowls at home. Skin-on or skinless fillets work, and the corn starch coating gives the fish a browned shell while the center stays tender after a quick skillet cook in sesame oil.
I season the rice after it cooks, stirring in rice wine vinegar and sea salt, then leave it covered while I work on the fish (I like that part done before the skillet gets busy). It stays warm. I cut the salmon into bite-sized pieces before coating it. It's easier to eat with a fork.
Sesame oil needs to shimmer before the fish goes in, and I use a large skillet to give the pieces room. Once the salmon is browned on all sides, the soy sauce mixture needs 1 to 2 minutes in the pan and leaves a glossy coating over the pieces.
