Low heat cooks baby back ribs. High heat from the broiler adds color and flavor to the barbecue sauce on baby back ribs. Crockpot baby back ribs are a dish that is tender and easy to pull off the bone and covered with a lot of barbecue sauce (broiling adds the final bit).

After trimming silverskin, I pat racks dry and coat both sides with brown sugar seasoning. Patting racks dry makes the meat less moist, helping the seasoning stick to cracks and other areas on the rack. I add some sauce and vinegar to racks in the slow cooker. I do not add other liquids to the slow cooker, as the cooked pork will release other juices.
Slow cooking barbecue ribs makes them tender, but ribs cooked in a slow cooker won't have a dark, caramelized crust. To achieve a dark, caramelized crust on ribs cooked in a slow cooker, I laid the ribs on a baking sheet lined with aluminum foil, brushed them with reserved barbecue sauce using a pastry brush, and broiled on the top oven rack until the tops of the ribs were bubbly and charred at the edges. Let ribs rest for 10 minutes before serving so the sauce sets.
I serve crockpot BBQ ribs with deviled egg pasta salad and Asian coleslaw as side dishes. Both sides go well with the sweet-tasting ribs. The coleslaw provides a vinegary taste contrast to the ribs. I prepare two racks of ribs for four people. Black pepper and chopped parsley can be sprinkled over the caramelized crust of the ribs.
Why you'll love this recipe
- Brown sugar in the rub turns into a sauce ingredient and adds color to the broiler.
- Without the silverskin, the rub won't need to be absorbed into tissue to season the racks of meat after cooking.
- Placing racks against the sides of the crock or piling meat loosely in the crock lets hot air circulate around larger cuts of meat.
- Broiling on the top rack allows the sauce to bubble and darken, giving the ribs a grilled taste that you wouldn't get in a slow cooker.
- The foil sheet catches extra sauce during broiling. A pastry brush can be used to apply a thick finishing sauce.
- After a 10-minute standing time, the glaze thickens before parsley and cracked pepper go over the ribs.
Ingredients
- •4 lb pork baby back ribs (2 full racks, silverskin removed)
- •2 cups dark BBQ sauce (high sugar content)

- •2 tbsp apple cider vinegar
- •2 tbsp fresh parsley (finely minced, for garnish)
- •1 tsp black pepper (coarsely cracked, for garnish)
Instructions
- 1
Remove the silverskin from the back of the ribs, then pat the racks completely dry with paper towels.
- 2
Mix the brown sugar, kosher salt, garlic powder, and optional smoked paprika in a small bowl.

Rub the seasoning mixture thoroughly over both sides of the ribs.

- 5
Cover and cook on LOW for 7 to 8 hours, until the meat is pulling away from the bone.
- 6
Transfer the ribs carefully to a foil-lined rimmed baking sheet. Brush with the remaining 1 cup (240ml) BBQ sauce, then broil on the top rack for 3–5 minutes until the sauce is bubbly with charred edges.
- 7
Let the ribs rest for 10 minutes, then top with the finely minced parsley and cracked black pepper before serving.
